Damien Byrne - Founder & Tasmanian Sommelier
With our founder Damien Byrne being a local Coal River Valley boy, we have a unique knowledge of the Tasmanian vineyards, the varieties that they are known for, the history of the producers as well as tasting and learning about some of the most famous wines to come out of Tasmania over the past 15 years.
Damien has also worked extensively throughout Australia in the hospitality industry across many hospitality fields as well as some of the local tasmanian vineyards which were the Roslyn Vineyard and Pooley Wines Cellar Door here in the Coal River Valley, as well as presenting talks at the Taste of Tasmania and various wine shows.
Obtaining the Certified level from the Court of the Master Sommelier at 23, Damien went on to work for Guy Grossi (Grossi Florentino), Donavon Cooke (The Atlantic) as well as the prestigious Me Wah Restaurant Hobart here in Tasmania.
Having won national and international awards, the most famous being for the Best Medium sized Wine List in Australasia from the World of Fine Wine Magazine as well as 3 stars (2017, Me Wah Hobart) Damien showed his skill and knowledge of styles, quality levels and storytelling across this wine list.
With not just the wine and service knowledge, but also the capacity to recommend the best food matches for these local varieties, Damien can provide a complete package of how best to enjoy the fantastic story that is Tasmanian food and beverage with a focus on Tasmanian wines.

A sommelier or wine steward, is a trained and knowledgeable wine professional predominately although they should have a broad knowledge of all beverage products, normally working in top end restaurants who specializes in all aspects of wine service as well as wine & food pairing. The role in fine dining today is much more specialized and informed than that of a wine waiter.
Immersion; (noun) deep mental involvement in something or to immerse someone or something in a liquid.
Tasmania is known now worldwide for many things. Our scenery, food & beverages, our way of life and particularly our convict history to name a few.
The locals always know what’s happening and as such we have a deep and complex knowledge of the landscape of producers and landmarks that are worth seeing, with us having been immersed in the local industry for so long.
We want to take people on an immersion journey to experience what the Tasmanian ‘regions’ have to showcase to its guest, by figuratively showing them behind the scenes, special tastings or not commonly available wines, interesting facts, little known history and small paddock to plate producers in each of these regions.
We don’t want you to just taste wine! Or whisky! Or gin! Or local produce for example. We want you to region taste and take away a sense of what that area can showcase to the intrepid traveller, because each region is more than just one type of attraction.
We want to showcase real producers, real products and real experiences to you like never before.
